Meal Plan and Goals: Week of 11/05

I did some freezer cooking last week so this week's menu should be fairly easy.
Sunday: Meatloaf, potatoes, salad and macaroni & cheese
Monday: Chicken wraps
Tuesday: Pork steaks, baked potatoes, corn and salad
Wednesday: Cajun style chicken leg quarters...not sure what sides yet. This recipe came from Don't Panic Dinner's in the Freezer. I will let you know how it turns out.
Thursday: Angus Beef hamburgers (Really good deal on them) & hot dogs for the one who doesn't like hamburgers. Homemade baked fries. Next time I freezer cook, I am going to freeze homemade baked fries, I think that would really save some time.
Friday: Potato soup (another meal from freezer cooking day) & grilled cheese sandwiches.
Saturday: Leftovers or homemade pizza..not sure yet
GOALS:
I know, I know, where are my goals for the week??
Still in my head.
Actually there are some things going on that could make this week unpredictable, so I will just focus on those that I did not finish from last week...we'll see.

Meal Plan & Goals Week of 10/30

It was busy weekend & busy Monday but all is calm here on the first day of November.
Here is a look at what is on our menu for the week:
Sunday: Pot luck at church. I made potato soup and homemade Italian breadsticks (surprisingly they both ended up being a hit!)
Monday: Chili and hot dogs (a Halloween tradition here)
Tuesday: Pork steaks, mash potatoes, salad & corn
Wednesday: Chicken wraps
Thursday: Burgers, homemade fries & macaroni
Friday: Leftovers..clean out the fridge night
Saturday: Bonfire at church
I accomplished quite a bit last week, unfortunately most of it was not on my list of goals from last week.
Here are a some things I would like to finish up this week:
Personal:
- Gym or exercise at home minimum 3x's. (Ongoing goal)
-Finish up Self Talk, Soul Talk and also 1/2 Price Living by Ellie Kay.
Family:
- Make Gratitude Journals with the kids.
Homemaking:
-Finish household binder (it is started)
-Clip coupon inserts that were given to me
Supplementing Income
-Write. write, write!

Meal Plan & Goals Week of 10/16

Yup. Yup.
It is Tuesday. Evening.
I do not have my meal plan posted.
I do not have my goals for the week ready.
Not that I have to make a new list since most of my goals for last week went unmet (Is that word??)
Last week went totally crazy on me.
We started it off with my oldest injuring herself at cheerleading practice that required a trip to the urgent care...she's alright. Her ankle not so much.
Pretend that there is a picture of my beautiful twelve year old here on crutches. I can't find my adapter to my camera..yeah, this week isn't going that great either.
Oh and then I get a letter sent home from my daughter's pre-school stating that she could not return to school this week if I did not have her BMI assessed, as well as, her diabetes risk assessed.
Call me crazy, but I was not worried. Nonetheless, I took her to the doctor anyway and waited.
And waited.
And waited...Guess what...she's tall for her age.
Who knew.
Okay..Okay..back to our meal plan for the week..
Sunday - 60th birthday for my husband's aunt - yeah we ate all. day. long.
Monday - Leftovers from above party.
Tuedasy - Clean out the freezer, fridge and pantry.
Wednesday - Pork Loin, mashed potatoes, corn & salad
Thursday - Grilled hamburgers, homemade french fries, pasta salad
Friday - Homemade Pizza using my tried and true pizza dough recipe
Saturday - Unsure at the moment, tentatively have plans to be out, but that could change. If it does, probably spaghetti, homemade bread & salad.
As far as my goals for the week, why not just re-read them here. Sad to say, but they are almost the same, I completely finished ONE, while others I worked on but did not complete.
Oh and one more thing...SOMEONE STOLE MY SUNDAY PAPER!! BOOOOOOO!! I still cannot believe it, I was so sad. The one Sunday that I did not pick me up an extra paper too.
I am praying for a calmer week...we'll see.

So last's weeks meal plan definitely did not go as plan. There were quite a few unexpected things that popped up.
I really need to freezer cook.
I mean really need to.
Anyway, here is a peek at what our menu will look like this week.
Sunday - Mom's pot roast w/ all the sides!
Monday - Charbroiled Black Angus Hamburgers, scalloped potatoes, corn & salad
Tuesday - Crockpot lasagna salad & homemade bread. This was on the menu last week, but we did not get to have it.
Wednesday - Vegetable beef soup & grilled cheese. Yet another that we did not have last week.
Thursday - Chili....mmmmmm, I so love chili!!
Friday - Homemade pizza & salad
Saturday - Grilled chicken sandwiches, pasta salad & corn.
While we have alot going on this week too, hopefully, it will be easier to stick with our menu!

Last week we tried the hashbrown and pork chop casserole.
It was Wonderful!!
**The only variation was that I used southern style hashbrowns instead of shredded hashbrowns.**

Menu Planning: Why I Do It And This Week's Menu

Making a menu each week is essential if I do not want the temptation of running to our local Little Caesar's Pizza place for a couple of $5 pizzas.
While $5 pizzas are an "easy to justify" purchase, I mean come on, they are convenient & the kids totally LOVE them...
BUUUUTTT.....
We are trying to save money, not spend it carelessly. So I try to stick with a menu.
So here it is our menu for this week. I did assign meals to particular days, however, that is all subject to change.
Sunday - Spaghetti & Salad
Monday - Grilled hamburgers & hot dogs, corn, pasta salad & homemade fries
Tuesday - Hashbrown & Pork Chop Casserole
Wednesday - Breakfast (pancakes, eggs, sausage & toast)
Thursday - Chicken tortilla wraps, corn & salad
Friday - Leftovers (possibly date night with hubby with our free dinner coupons to Outback)
Saturday - Homemade pizzas using the fastest & easiest homemade pizza crust ever!
Disclosure: We do eat out sometimes, we just try to plan and budget for it if at all possible. I just feel "guilty" if we eat out because of my unpreparedness...
