Last week we tried the hashbrown and pork chop casserole.
It was Wonderful!!
**The only variation was that I used southern style hashbrowns instead of shredded hashbrowns.**
Definitely a two thumbs up!
Here's a look at our menu for this week...
Sunday: Leftover Chinese food from my sister-in-law!
Monday: Roasted chicken, corn, mashed potatoes, salad & mac n cheese (for those who won't eat the potatoes.)
Tuesday: Crockpot Lasagna..this is a new one for us, but I am anxious to try it. I will post the recipe below in case you want to throw it in the mix!
Wednesday: Tacos
Thursday: Beef stroganoff & vegetable beef soup
Friday: Leftovers
Saturday: Spending the day with my niece. Her, the kids & I may take advantage of the "kids eat free" at Denny's, especially since I have Denny's coupons that will make it an even better deal!
Crock Pot Lasagna (Received from a Facebook Friend)
1 pound of Hamburger Meat
1 pound of Italian Sausage
1 box Lasagna Noodles (depending on the size of your crock pot, usually 1/2 box is enough)
1 pkg Shredded Mozzarella Cheese
1 pkg Shredded Parmesan Cheese
1 small container of Ricotta Cheese
2 1/2 jars of Spaghetti Sauce
***Crock pot liners will make clean up easy***
You do not cook the noodles, you will break them in half for your layers. You will need to save about 1/2 cup or more of meat sauce depending on the size of your crock pot for your final layer.
Brown hamburger meat & Italian sausage together, add spaghetti sauce and mix well.
You will layer the ingredients in the crock pot starting with:
meat sauce
uncooked lasagna noodles
ricotta cheese (spread over noodles. This can get tricky, I use a spoon or spatula)
mozzarella cheese and Parmesan cheese
Continue to layer ingredients until all meat sauce and cheeses are used. With your final layer of meat sauce, make sure your last layer of noodles is completely covered. If not, whatever part of the noodles is not covered will not cook.
Cook on low heat for 5-6 hours. Spoon out for a delicious meal.
That sounds so easy & so good!!
